The Chiplomango Sauce from Marcia Enciso from Sonora, Pacific state. She made her grand creation during a sleepless night when she mixed her favorite ingredients: chipotle chili, mango, and tamarind. The result is as versatile as it is delicious and widely recommended, mainly to accompany fish and seafood dishes.
For its part, the Xoconostle Sauce from Efraín Hernández de San Luis Potosí, a state located in the Northeast of the country, is a tribute to the morita chili, its smoky spice and sweet notes make it unique to balance the acidity of the xoconostle, a cactus fruit native of the region. It is ideal for meats and snacks.
Daniel Hernández, from the capital city at heart, was inspired by the tradition of his parents to create the sauce that bears his nickname: Don Danny. Don Danny Sauce is an unbeatable mix of serrano and dry chili that combines three preparation processes. Central Mexico has always been recognized for its varied repertoire of sauces and this is a great example of them to combine with tacos of any kind.
These are some stories that their creations shared with us about the origin of the recipe:
Pacific Region | Marcia enciso | Chiplomango Sauce | Sonora
“On a sleepless night, I discovered the contest on the internet, so I decided to create a different sauce than the ones I knew. I used mango because it is my favorite fruit and tamarind to give it a sweet and slightly tangy touch. I added heat through the chipotle; This type of chili is the one that was always in my mother's house at lunchtime. When I first tried this combination, I found that I had prepared something much better than I expected. I enjoy combining it with fish and seafood tostadas. "
Southeast Region | Angelina Ambrosio | La Picante sauce | Oaxaca
“Since I was little, I observed that in different festivities in the place where I live, they made a guajillo chili-based sauce, but I didn't like the consistency or the flavor very much because it didn't bite. Later I started an Oaxacan food business and decided to prepare that sauce but adding morita chili and arbol chili to give it a better flavor and to make it spicier. I suggest you try it with all kinds of Mexican snacks. "
HERDEZ del Fuerte recognizes that the culinary variety of our country is unlimited, and the contest "Presume your Salsa" proved it. Only five of the more than twelve thousand recipes made it to the final stretch and it is now that the dream of its creators finally materializes with the launch of three of the five winning sauces, hoping that Mexicans will like them and are encouraged to collect. the different jars.
